Prepared as per the traditional recipe, our souri green olives are thoroughly picked, calibrated, and cracked. They are then tossed in a mixture of water, white grape vinegar, and salt, leaving it to ferment.
Prepared as per the traditional recipe, our souri black olives are kept to ripen on the trees. Later they are thoroughly picked, calibrated, and submerged for some time in a mixture of water, red wine vinegar and salt, to avoid oxidation and promote the fermentation process.
